  1. For the Dal
  2. 1/2 cup Toor Dal (Arhar dal/pigeon pea)
  3. 1 Tomato, finely chopped
  4. to taste Salt
  5. 1 pinch Turmeric powder
  6. 2-3 drops oil
  7. 3 cup water
  8. For the Dhoklis
  9. 1 cup whole Wheat flour
  10. 1/4 cup Besan (gram flour)
  11. 1/2 tsp Carom seeds
  12. 1 pinch Turmeric powder
  13. 1/4 tsp red chilli powder
  14. 1 pinch Asafoetida (Hing)
  15. 2 tsp oil
  16. to taste Salt
  17. as needed Water to make dough
  18. For the Tempering
  19. as needed Curry leaves
  20. 1/2 tsp Mustard seeds
  21. 1/2 inch ginger, crushed
  22. 3 cloves Garlic, crushed
  23. 1/2 green Chilli
  24. 1 pinch Turmeric powder
  25. 1 pinch Asafoetida
  26. 1 pinch red Chilli powder
  27. 2 tsp Tamarind paste or Lemon Juice
  28. 2 tsp Powdered Jaggery
  29. to taste Salt
  30. 2 cups Water
  31. For the Garnishing
  32. As needed chopped Coriander
  33. 1 tbsp Ghee

Steps to make to make Gujarati Dal Dhokli

  1. For making dough for dhoklis, first combine whole wheat flour, besan, carom seeds, heeng, turmeric powder, red chilli powder, salt and oil. Add water and mix well. Knead into a smooth and semi-stiff dough (but not as soft as we make for roti/chapatis) and let it rest for 15-20 mins.
  2. Wash the Toor dal and pressure cook the dal with finely chopped tomatoes, salt, turmeric powder, water and few drops of oil to 3-4 whistles.
  3. Meanwhile divide dough in 2 equal big balls. Roll out the dough ball to big and slightly thick circle. Now cut dhoklis into your desired shapes. Diamonds(Burfi) shapes are easier.
  4. Keep aside the dhoklis. Now prepare tadka. In a pan, heat oil. Add mustard seeds and curry leaves and green chillis let it crackle. Add crushed hing, ginger, garlic, turmeric powder, red chilli powder and saute for 2 mins. Add cooked dal to this tadka.
  5. Add 2 more cups of water, tamarind paste or lemon juice, jaggery and some more salt to taste. Bring to a boil, then start adding dhoklis to Dal. Keep stirring so that dhoklis won't stick to one another. Simmer for 10-15 mins or till the dhoklis are cooked well. Garnish with coriander leaves and enjoy hot with ghee!
