Chiroti also known as Chirote is a delicacy predominantly served in Karnataka and Maharashtra.
Chiroti is a fried flaky pastry with concentric circles of delicate layers that is either sprinked with a generous amount of cardamom flavored powdered sugar or dipped in cardamom flavored sugar syrup.
It is served as a dessert on special occasions such as a festival or a wedding.
Ingredients and spices that need to be Make ready to make Chirote:
- For making dough ingredients-:
- 2 cups Maida
- 2 Tbsp melted ghee
- 1/8 tsp salt
- as required Water to knead
- FOR sprinkle Sugar
- 3/4 cup powdered sugar
- 1/2 tsp cardamom powder
- For paste-
- 2 Tbsp corn flour
- 1 1/2 tsp melted ghee
- For sugar Syrup--
- 1 cup water
- 1 cup sugar
- 1/2 tsp cardamom powder
Instructions to make to make Chirote
- Mix well maida, melted ghee, salt and knead to make a smooth, firm dough with the help of water as per required.
Cover the dough and keep aside for at least an hour. - Meanwhile to make Sprinkle- mix powdered sugar and cardamom powder well and keep aside.
- Then prepare Sugar Syrup by heating sugar and water in a vessel to make single thread consistency. Add cardamom powder. Turn off gas and keep aside.
- Also prepare paste to bind the layer of poli by mixing corn flour and ghee.
- Now after hour take dough and divide into equal portions. Roll each portion into thin rotis and smear 1 tsp corn flour paste all over one roti. Place another rolled roti over it press slightly with hand and again smear tsp paste all over second roti. Repeat the process till you come to third or fourth roti. Then gently rolled pilled up roti into log.
- Make a tight roll of these roti layers. Cut them vertically into small parts. Now press this small dough so you see concentric circles and again roll into medium sized chiroti.
- Heat oil/ghee in kadai for deep frying.
Deep fry chirote both side on medium flame till they turn golden shade. - Remove chirotis from oil then dip into sugar Syrup and allow them to absorb the syrup.
- Or if you donot dip chirotis in Syrup then sprinkle sugar powdered on it before serving.
