  9. when oil is ready place chicken skin side down in pan. my skillet fits 4-5 pieces just make sure there is space between every piece.
  10. let cook skin side down about 15-20 minutes checking occasionally. don't let skin burn it dries out the chicken
  11. flip chicken to bone side down qnd cook another 15-20 minutes
  12. it is best to remove chicken and place on cooling rack wirh paper towel on counter putting directly onto paper towel changes the taste
  13. repete and cook with rest of chicken
  14. cooking time varies due to the temp you use and the part of chicken you are cooking. it is best to cook a little longer on a slightly lower temp so you don't burn the skin but the chicken is cooked all the way through.
  15. let chicken sit at least 5 minutes to allow juices to settle in the meat
