- handful green coriander

- 1 tsp roasted cumin powder
- 1 tsp black pepper powder
- 1 tsp black salt

- 1 tsp chat masala
- 1 tsp citric acid

- In a bowl add suji, oil, salt and baking soda, mix well. using Lukewarm water knead a semi-soft dough and cover it with wet cloth and keep aside to rest for at least 10 mins.
- After that grease your hands with little oil and knead the dough again to make it smooth and divide it into 2 or 3 parts and cover it with wet cloth.don't let them dry.
Take a portion of dough and roll it like big roti, cut it with a round cookie cutter.
- Add/drop all puris (7-8 at a time)one by one in medium hot oil (nudge the puris with the help of a slotted spoon to puff up immediately)and fry on low flame till nice golden. take them out and let them cool completely and keep in airtight container to store.
- In a blender jar add fresh coriander, green chilli, ginger, mint leaves, hing, black pepper powder,roasted cumin powder and blend them to make paste.
take out the paste in a bowl, add as required cold water,salt,chat masala, citric acid and mix well.(u can use raw mango water instead of citric acid if available).
